Try Our Cheesy Chicken Broccoli Bake!

Ingredients:

  • 1cup 4Sisters parboiled rice, uncooked

  • 1tbsp. olive oil

  • 1 cup small yellow onion, chopped

  • 2 tbsp. minced garlic

  • 1lb. chicken breast, cubed

  • salt & pepper, to taste

  • 21/2 cups chicken broth, divided

  • 1 cup heavy cream

  • 2 cups broccoli florets

  • 1 cup cheddar, shredded

  • 1/4cup panko breadcrumbs

Directions:

  1. In large oven-safe skillet on medium-high heat, sauté onion in olive oil with garlic until onions are tender or translucent.

  2. Add chicken, season with salt & pepper. Cook until golden, about 5 minutes. 

  3. Stir in parboiled rice, heavy cream, & 1 cup of chicken broth. Bring to simmer & cook until rice is tender, about 15 minutes. 

  4. Add remaining 1 1/2 cups chicken broth, broccoli, & cheddar cheese, cooking until broccoli is tender & cheese is melted, about 10 minutes. 

  5. Heat broiler. Sprinkle chicken mixture with breadcrumbs & season with salt & pepper. Broil until golden & crispy , about 2 minutes. 

Serves about 6
