Brown Fried Rice
Brown rice is the better grain for fried rice and almost nobody says so. The bran layer holds each grain together in a hot pan, so it stays chewy instead of collapsing.

Brown Rice Is Built for This
Brown rice is structurally better suited to fried rice than white rice, because the bran and germ are still attached. That outer layer acts like a jacket, holding each grain intact through the tossing and high heat that turn softer white rice to paste.
Most fried rice recipes treat brown rice as the compromise you make for fiber. We mill both, and we would argue the opposite. The bran gives you a nuttier flavor that stands up to soy sauce and sesame, and a chew that does not go anywhere.
Our Organic Brown Rice is certified 100% whole grain by the Whole Grains Council, which means every grain was a whole grain from the field through the mill. Nothing was stripped and added back.
The rules from white fried rice still apply. Cook it the day before, chill it uncovered, and break up every clump before it goes near the pan. Brown rice just gives you more margin for error once it gets there.
• 4 cups cold cooked 4Sisters Organic Brown Rice, from about 1 1/3 cups dry
• 3 tbsp neutral oil, divided
• 2 large eggs, beaten
• 1 cup shelled edamame
• 1 cup frozen peas and carrots
• 1 red bell pepper, diced small
• 4 cloves garlic, minced
• 1 tbsp fresh ginger, grated
• 3 tbsp soy sauce or tamari
• 1 tbsp rice vinegar
• 2 tsp toasted sesame oil
• 1/2 tsp red pepper flakes, optional
• 4 green onions, sliced thin
• Toasted sesame seeds, to finish

The Day Before
1. Cook the brown rice a day ahead
Combine 1 1/3 cups dry brown rice with 2 2/3 cups water, bring to a boil, cover, and simmer on low for 40 minutes. Rest it covered for 10 minutes off the heat.
Spread it thin on a sheet pan and refrigerate uncovered overnight.
2. Break it up and line everything up
Run your fingers through the cold rice to separate every grain. Brown rice clumps less than white because the bran keeps the grains from fusing, so this goes quickly.
Cut and measure everything before you start. From here it is twelve minutes with no pauses.

3. Scramble and reserve the eggs
Heat 1 tablespoon of oil in a large skillet or wok over medium-high, pour in the eggs, let them set 20 seconds, then scramble into soft curds and tip onto a plate.
4. Cook the vegetables hot
Add another tablespoon of oil and raise the heat to high. Add the bell pepper, edamame, and peas and carrots, and stir-fry 4 minutes until the vegetables are blistered in places. Add the garlic, ginger, and red pepper flakes, and stir for one minute.
5. Fry the rice properly
Add the last tablespoon of oil and all the cold brown rice. Press it flat and leave it alone for 90 seconds so the bottom toasts, then toss. Repeat three times over about 5 minutes.
You are listening for the grains to rattle and looking for a few visibly browned edges. Brown rice needs longer contact time than white to develop that, so resist stirring it constantly.
6. Season off the edge
Pour the soy sauce and rice vinegar around the rim of the pan so they hit hot metal first. Toss, then add the sesame oil, reserved egg, and green onions. One more toss and it is done. Finish with sesame seeds.
TIP FROM THE FARM
Cook a double batch of brown rice whenever you make it. Forty minutes is a real commitment for a weeknight, and cooked brown rice freezes better than white because the bran protects the grain from freezer burn. Portion it flat in bags and it goes straight from the freezer into a hot pan.
How We Serve It
We eat this as a full meal on its own and as a side next to grilled fish or chicken. Add shrimp or leftover pork in the last two minutes if you want more protein, though the edamame already brings a fair amount.
Brown fried rice looks different from the white version. The color is deeper and more uniform, the grains are visibly plumper, and it holds its shape in the bowl instead of settling. It also fills you up on noticeably less, which is the fiber doing its work.
Unlike white fried rice, this one genuinely reheats. The bran keeps the grains from drying out, so a portion warmed in a skillet the next day is close to the original.

Brown rice starts firmer because of the bran, so a few hours in the refrigerator spread thin on a sheet pan gets you most of the way there. Overnight is still best.
What is the water ratio for brown rice?
About 2 cups of water per cup of dry brown rice, simmered covered for 40 minutes and rested 10. The bran layer slows water absorption, which is why brown rice needs both more liquid and roughly twice the time of white rice. Do not rinse it first, since there is very little loose surface starch to remove.
