Ingredients:
2 tablespoons unsalted butter
1 lb. steamed or boiled, peeled & cooked large shrimp
salt & pepper, to taste
1 teaspoon of salt
½ teaspoon of black pepper
½ cup basil pesto, homemade or prepared
½ cup heavy whipping cream or half & half for a lighter sauce
4Sisters cooked white or brown rice
Top with parmesan cheese if desired
Directions:
In a large skillet, melt the butter over medium to medium high heat.
Add the cooked, boiled and peeled shrimp to the mixture, salt and pepper and cook 1-2 minutes until shrimp is hot, do not overcook.
Mix the basil pesto and ½ cup cream or half & half together.
Add the pesto and cream mixture to the melted butter.
Serve over 4Sisters cooked brown or white rice.
Top with parmesan cheese if desired.
*(Raw shrimp can be cooked in the melted butter 2-4 minutes until shrimp are pink, before adding the pesto and cream).
