Peachy Grilled Chicken Rice Bowl
Ingredients:
Chicken Marinade:
• 1/4 cup olive oil
• 1/4 cup low sodium soy sauce
• 2 tbsp. honey or brown sugar
• 1 tbsp. minced garlic
• 2 tsp. red pepper flakes
• Pinch of salt
• Pinch of pepper
Dressing:
• 3 tbsp. apple cider vinegar
• 2 tbsp. Dijon mustard
• 2 tbsp. maple syrup
• 1 tbsp. finely chopped green onion.
Remaining Ingredients:
• 1 ½ cups cooked 4Sisters Organic Brown Rice
• 4 tbsp. butter
• 2 ripe peaches, quartered.
• 6 boneless, skinless marinated chicken thighs
• 6 pieces of cooked, crumbled bacon, if desired
• 6 cups your choice of greens (Arugula, Spinach, Mixed Greens, etc....)
• ½ cup crumbled cheese of choice (goat, feta, or blue cheese, etc...)
Directions:
1. Marinate chicken at room temperature for 30 minutes or in the refrigerator for several hours to overnight.
2. Whisk together all dressing ingredients.
3. Place peach quarters on a buttered grill plate and grill on medium heat for 3-4 minutes per side. Set grilled peaches aside.
4. Grill chicken thighs on greased or buttered grill plate or grill for 6-7 minutes per side, or until done.
5. To serve, layer greens, cooked rice, grilled peaches, & grilled chicken.
6. Drizzle with dressing and add crumbled bacon just before serving.
Serves 4-6.
