Jalapeno Shrimp With Pineapple Salsa

Try Our Jalapeño Shrimp with Pineapple Salsa!


  • 1cup 4Sisters jasmine rice, cooked

  • 1lb. boiled, peeled shrimp

  • 2tbsp. olive oil, divided

  • 2tbsp. minced garlic, divided

  • 1tsp. soy sauce

  • 1tsp. chili powder

  • 1tsp. honey

  • 2 fresh jalapeños, seeded & minced, divided

  • 1 can black beans, drained

  • 1tbsp. cumin

  • 1 20oz, can of diced pineapple, drained

  • 1/2 red onion, chopped

  • 2tbsp. fresh cilantro, chopped


  1. In a large bowl, mix shrimp, olive oil, garlic, soy sauce, chili powder & honey. Set aside

  2. Heat olive oil over medium high heat, adding in japaeño & garlic. Let sauté for a few minutes until jalapeño is tender.

  3. Once tender, stir in black beans, & season mixture with cumin. Cook until warm.

  4. In a large bowl mix jalapeño, pineapple, red onion, & fresh cilantro.

  5. To serve, add jasmine rice to bowl & top with black bean mixture, pineapple relish, & shrimp.

Serves about 6
